A new bar in Lower Parel promises to serve you “just one more drink” at the end of the night

Back at my table, more cocktails are waiting for me. To my surprise, they are all clear. No bubble gap before sipping, no smoked cauldron effect, no edible flowers that you are not sure to eat. Just pure flavors ready to be appreciated without any pump. The cocktail menu is also without hassle, entirely built around clarified drinks, said the main mixer Prithvi Agarwal. For whiskey enthusiasts, there is a whiskey embarrassed with milk, where the sweetness of mango and fishing meets the flavor of Kaffir Lime and Matcha Umami. Mezcal takes a daring turn here, served with an edge of celery salt and a pinch of olive brine, adding a salted touch to each sip.
Sitting with Nikita Shahri, director and founder, Chrome Hospitality, we have linked to our shared love for the culture of a single Barcelona bar, where drinks take the front of the stage and food is a reflection afterwards. “This is what inspired the design of the late cash register,” she says. “We intentionally designed the tables to be smaller, so the limited space encourages our guests to savor their drinks and order more small plates. We want to extend the time of their bar, make the space more focused on the bar than the restaurant. Shahri laughs, recalling how she spent her time at Barcelona Bar-Hopping with a measurement band, noting every detail that inspired her. “My husband distracts the barmans while I slipped into measurements of everything, window frames with bar counters just so that I can bring a small slice of this charm at home.”
